Do you ever just have those days where you’re like, “I just need some comfort food. Something like creamy potato soup.”
No? Just me?
Well, I’ve had more of those days recently where I’ve been all about the comfort food. It just feels super cozy to me to have food that just feels like home when you need it.
So I’m sharing with you, one of my favorite, 100% go-to recipes that always makes me feel better.
And it makes it taste even better when it is easier to make! With building my own business, managing two tweens with thriving social lives and their sports’ schedules, it definitely helps when it’s easy.
Slow Cooker Creamy Potato Soup
I’m writing this from bed after a long day out at kids activities, so I’m gonna just jump right into it and give you this recipe.
Feel free to make it what you want. Sometimes I add in more seasonings for flavor on days I’m feeling spicy. Other days, it really is just garlic powder and pepper. Maybe there are other vegetables you might like too?
My kids love peas and carrots and I find I just really like the texture more when I have those veggies in there. You can always leave them out too if it’s not your jam. This is the one I just get from our local grocery store. They are in the frozen section.
This is just the foundation and can be made this way. Although, if you’re feeling festive or creative, spice it up a bit.
We mix it all in together.

Description
This delectable comfort food will have you coming back bowl after bowl. It’s truly one of my favorite meals. I could eat this and NEVER get sick of it.
Ingredients
- 1 (30 oz.) bag frozen hash-brown potatoes (I used cubed because they are best for me – you can use the other ones but the texture might be softer)
- 2 (14 oz.) cans chicken broth
- 1 (10.75 oz.) can cream of chicken soup
- 1 bag of frozen cut up peas & carrots
- 1/2 cup chopped onion
- 1 tablespoon of garlic powder (if you love garlic – add 2 tablespoons – it’s soo good)
- 1/4 teaspoon ground black pepper, (more to taste)
- 1 (8oz) package cream cheese (softened)
Optional Toppings: cheese, bacon, sliced green onions
Instructions
- In a slow cooker, combine potatoes, chicken broth, soup, onion, bag of peas & carrots, garlic powder and pepper.
- Cover and cook on low for 5-6 hours. Your potatoes will start to fall apart when it’s ready.
- Add the cream cheese and cook for an additional 30 minutes or until cream cheese is melted, stirring occasionally, until combined. I’m a stirrer (word?) by nature – but make sure it’s gentle stirs.
- You can top with cheese, bacon, or sliced green onions/scallions if desired.
